First of all, LOL at the inclusion of Harry and Hermione. However, it's not that JKR overlooked that pairing - it was, after all, brought up as a possibility - it's just that that wasn't where she was going. No, not even in those two moments she mentioned in DH. :P

I've been what you'd call a "canon-shipper" all my life, I think. The only times I can think of where I shipped a non-canon pairing was if it *was* canon at one time (though for some pairings fairly briefly or pre-canon) and the author split the couple up to go in another direction (See, my brief fling with Josh/Mandy on The West Wing, my stubborn clinging to Dawson/Joey on Dawson's Creek, Xander/Willow even though I loved Willow/Oz and Xander/Cordy, and Mark/Susan on ER.)

Well, I guess Joey/Phoebe on Friends qualifies. And Sam/Ainsley on The West Wing, even though I'm convinced they would have explored it at some point if Emily Proctor hadn't gotten her own show. I'll just live in my happy world of Sam-and-Ainsley-hooked-up-after-the-show-ended. They would have made a great Carville/Matalin. :D

I read that Matt LeBlanc and Lisa Kudrow actually proposed Joey/Phoebe to the writers (though it was more the idea that they'd been having casual sex throughout the series and it was just suddenly revealed), but it was rejected.

Sam/Ainsley! I was so mad when Emily Proctor left the show. I mean, I know, good for her!, but I really loved Sam/Ainsley!

Joey/Phoebe! I adored them, much like I adored Neville/Luna. I understand why neither happened (too neat to pair all six), but I'll always have a fondness.

ETA: I also liked pairings that happened but were later broken up like you mentioned, Willow/Oz, Xander/Willow, Xander/Cordy, etc. I liked them all.

I think I'm gunna have to do this one, but I think I'm mostly along the same lines as you, but maybe with some other fandoms too :)
